Using ON THE UMAMI’s classic Umami Dashi Bonito and Kombu Kelp dashi packet as the base, we blended it with a carefully prepared paste made from Yukishita carrots—a rare variety harvested only in early spring from Tsunan, Niigata—and added fragrant Japanese apple cider vinegar.

The result is a fresh, light dressing that gently balances the natural sweetness and aroma of the carrots with the brightness of apple cider vinegar and a touch of citrusy yuzu juice.

In the snowy town of Tsunan in Niigata, Japan, carrots are left to grow beneath a thick blanket of snow during the winter months. This traditional Japanese farming method, known as “yukishita ninjin” or “snow-carrot,” allows the carrots to slowly develop natural sweetness and deep umami flavor. The snow acts as an insulator, protecting the roots from freezing temperatures while gently reducing bitterness. The result is an exceptionally smooth, sweet carrot that brings a rich, mellow taste to our dressing. This is a unique flavor born from Japan’s seasonal wisdom and deep respect for nature.
