What is "Ago"?
“Ago” is the Japanese word for flying fish, especially in the Kyushu region. Because flying fish glide above the ocean surface, their bodies are lean and firm, containing little fat. 【Light Dashi Broth (Basic Style)】
Place one dashi packet in a pot with 500ml (about 17 fl oz) of water. Gently stir the packet with chopsticks about five times. Once the water begins to boil, reduce to medium heat and simmer for 3 minutes. Remove the packet before serving.
This light dashi broth pairs well with dishes where the broth is enjoyed as part of the meal, such as miso soup, savory steamed egg custard (chawanmushi), udon, and soba.

Tear open the dashi packet and add the contents directly to your dish for a rich, umami-packed flavor.
It works especially well as a topping for rice balls, in savory Japanese pancakes (okonomiyaki), or as a seasoning to instantly enhance stir-fries, marinades, or other cooked dishes.
