What is Iriko?

Iriko refers to small fish such as sardines that have been boiled and dried. It is commonly used not only for making dashi (soup stock), but also eaten as-is or used as an ingredient in various dishes. Rich in inosinic acid, iriko is known for its bold umami flavor and toasty aroma.

【Light Dashi Broth (Basic Style)】

Place one dashi broth packet in a pot with 500ml (about 17 fl oz) of water. Gently stir the packet with chopsticks about five times. Once the water comes to a boil, reduce to medium heat and simmer for 3 minutes. Then remove the packet.
This light dashi broth is ideal for miso soup, ramen, and other dishes where the broth is enjoyed as part of the meal.

【Tear Open the Dashi Broth Packet and Use】

Tear open the dashi packet and add the contents directly to your dish for a deep, umami-rich flavor.
It also works well as a topping for rice balls and savory Japanese pancakes (okonomiyaki), or as a seasoning in recipes that call for bold, savory depth.
