What is Hon-kare Katsuobushi?
Hon-kare katsuobushi is the highest-grade katsuobushi, produced through a time-intensive aging process. Starting with arabushi (boiled and dried bonito), the surface is carefully shaved to remove tar and fats. Then, katsuobushi-kōji-mold is applied and the fish is sun-dried repeatedly—typically four or more times. This not only eliminates fishy odors and bitterness but also concentrates natural umami and imparts a refined, elegant aroma, making it a cornerstone of high-quality Japanese cuisine.

【Light Dashi Broth (Basic Style)】
Place one dashi packet in a pot with 400ml (about 14 fl oz) of water. Gently stir the packet with chopsticks about five times. Once the water begins to boil, reduce to medium heat and simmer for 5 minutes. Then remove the packet.
Enjoy the rich, distinctive aroma of dried bonito flakes in a variety of dishes, including soups, savory steamed egg custard, and ochazuke (green tea poured over rice).
